Mini Apple Pie Waffle Bowls

When it comes to our little ones, we know the extra effort of taking a traditional dessert and turning it into a just-for-them-sized treat is a little gesture that means the world to them. That’s why these mini apple pies featuring enJOY-a-Bowls® are such a hit at home. Not only do they hold a single serving of pie filling, they fit in the palm of hands that are — you guessed it — on the little side.

We opted to create our own caramel sauce (combining just three ingredients) and top these tiny pies with a scoop of vanilla ice cream. Serve them warm and watch these little desserts elicit some big smiles.

What You’ll Need:

Apple Pie Filling and “Pie Crust”:

  • 5 large apples (red or granny smith), diced into ½-inch pieces
  • 2 tablespoons fresh-squeezed lemon juice
  • 1 ¼ cup water
  • 3 tablespoons cornstarch
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg
  • enJOY-a-Bowls®
  • Vanilla ice cream

Caramel Sauce:

  • 1 cup brown sugar
  • ¼ cup butter
  • ½ cup heavy cream

What To Do:

Caramel Sauce:

  1. Combine brown sugar and heavy cream into a small saucepan over medium-low heat. Stir with a wooden spoon until the sugar begins to melt through the cream.
  2. Add the butter. Once the butter completely melts, bring mixture to a rolling boil.
  3. Reduce heat to low and continue to cook until the sauce thickens, about 8 minutes.
  4. Remove from heat and allow to cool slightly.

Apple Pie Filling and “Pie Crust”:

  1. In a medium bowl, coat diced apples in lemon juice. Mix well and set aside.
  2. Whisk the cornstarch and water together until no lumps remain.
  3. Pour the cornstarch mixture into a medium saucepan over medium heat. Add the brown sugar, cinnamon, and nutmeg, and whisk again to combine. Bring to a boil while whisking continuously, until mixture begins to thicken.
  4. Add in the diced apples and give them a quick stir through the mixture; reduce heat to low and cover pan with a lid. Cover and cook for 8-10 minutes while stirring occasionally, until apples soften.
  5. Take off the heat completely while covered with the lid, and cool to desired temperature.
  6. Fill each enJOY-a-Bowl with apple pie filling, top with a scoop of vanilla ice cream, and drizzle with caramel sauce. Enjoy immediately after assembling to ensure a crisp enJOY-a-Bowl.
