Mini Cherry Cheesecake Bites

While there are many ways to eat cheesecake, most people’s favorite is to have it served with a traditional cherry topping. Unfortunately, there’s traditionally only been one way to eat cheesecake: at a table, on a plate, and with a fork. Now, thanks to Joy Cone, you can abandon the plate and fork, get away from the table, and have your cheesecake anywhere.

Joy’s Mini Cherry Cheesecake Bites use Joy Mini Cups as a deliciously edible, go-anywhere holder for cheesecake topped with cherries. Plus, if you think the graham cracker crust should be part of the whole cheesecake experience, Joy hooks you up there, too, by using graham cracker crumbs and whipped cream as a garnish.

What you’ll need:

  • Joy Mini Cups
  • 1 box no-bake cheesecake mix
  • 1 ½ cups milk
  • 1 can cherry pie filling or topping
  • 1 can whipped cream or whipped topping
  • Optional garnish: graham cracker crumbs

Directions:

Mix no-bake cheesecake filling mix and milk on low speed for 30 seconds, then on medium speed for 3 minutes. Note: filling will be thick.

Spoon topping into large zip top plastic bag. Begin twisting bag until filling is in a single corner. Carefully, with scissors, cut a small snip off of the corner of the bag so that filling can be piped into cones. (As always, scissors should be kept out of the reach of small children.) Pipe filling into cones and fill to approximately ½” from top.

Place filled cones—standing upright—onto plate or cookie sheet and carefully place into refrigerator for 1 hour.

After chilled, remove cones from refrigerator. Spoon 1 tablespoon of cherry pie filling or topping onto top of cone. Top with whipped cream or whipped topping and sprinkle graham cracker crumbs on top for garnish. Enjoy immediately.
